  • 2 garlic cloves, minced

  • 1 tsp chili powder

  • 1 large bag of sturdy tortilla chips
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup thinly sliced red onion
  • 12 jalapeños, sliced (optional)
  • 1 avocado, sliced or mashed into guacamole
  • Fresh cilantro, roughly chopped
  • Lime wedges
  • Sour cream or crema for drizzling


Instructions

  • Preheat oven to 375°F (190°C).
  • Toss shrimp with olive oil, garlic, smoked paprika, chili powder, salt, and pepper.
  • Cook shrimp in a hot skillet for 2–3 minutes per side until pink and opaque.
  • Spread tortilla chips evenly on a baking sheet.
  • Layer half of the cheese over chips, then top with shrimp, tomatoes, onions, and jalapeños. Add remaining cheese on top.
  • Bake for 5–7 minutes until cheese melts and bubbles.
  • Remove from oven, add avocado, cilantro, and lime juice. Serve immediately with sour cream.
