Description

These golden zucchini fritters are crisp on the outside, soft and flavorful on the inside. They’re the perfect way to use up fresh zucchini and come together with just a few pantry staples. Fresh herbs, garlic, and green onions make every bite bright and savory, and they’re ready in under 40 minutes.


Ingredients

  • 2 medium zucchini, shredded
  • 2 large eggs
  • 1/3 cup all-purpose flour
  • 2 green onions, chopped
  • 2 tablespoons chopped fresh parsley or dill
  • 1 garlic clove, minced
  • 1/2 teaspoon baking powder
  • Salt and black pepper to taste
  • Olive oil or neutral oil for frying


Instructions

  • Shred zucchini, sprinkle with salt, and let sit for 10 minutes.
  • Squeeze out excess moisture using a clean dish towel or cheesecloth.
  • In a bowl, mix zucchini with eggs, flour, onions, herbs, garlic, baking powder, and seasoning.
  • Heat oil in a skillet over medium heat. Drop 2 tablespoons of batter per fritter, flatten slightly.
  • Fry 3–4 minutes per side until golden and crisp. Drain on paper towels.
  • Serve warm with dipping sauce or toppings of choice.
