  • 4 boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 cups fresh pineapple, cubed
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, finely chopped
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon chili flakes (optional)
  • 1 tablespoon cornstarch
  • 2 tablespoons sesame oil
  • 2 tablespoons vegetable oil (for frying)
  • 1 tablespoon spring onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (optional for garnish)

Instructions

  1. Marinate chicken with soy sauce, sesame oil, cornstarch, garlic, and ginger for 10 minutes.
  2. In a small bowl, whisk together soy sauce, honey, vinegar, chili flakes, and cornstarch to make the sauce.
  3. Heat vegetable oil in a large skillet over medium-high heat. Sear the chicken until golden brown on all sides, about 5 minutes. Remove chicken from the pan and set aside.
  4. In the same skillet, add pineapple and cook until slightly golden, about 3-4 minutes.
  5. Return chicken to the pan with pineapple. Add the sauce and toss to coat. Cook for another 2-3 minutes until the sauce thickens and the chicken is fully cooked.
  6. Garnish with spring onions and sesame seeds. Serve hot with rice.

Notes

For a sweeter flavor, add more honey or brown sugar to the sauce.

For added texture, top with toasted coconut flakes or chopped nuts.
