Ingredients

  • 2 ripe avocados
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ¼ cup red onion, thinly sliced
  • Fresh herbs (cilantro or parsley)

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse with cold water.
  2. In a blender, combine avocados, lemon juice, olive oil, garlic, salt, and pepper. Blend until smooth.
  3. In a large bowl, toss the cooled pasta with the avocado sauce.
  4. Add the cherry tomatoes, cucumber, red onion, and fresh herbs. Toss gently to combine.
