- 2 ripe avocados
- 1 tbsp lemon juice
- 2 tbsp olive oil
- 1 garlic clove, minced
- Salt and pepper, to taste
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ¼ cup red onion, thinly sliced
- Fresh herbs (cilantro or parsley)
Instructions
- Cook the pasta according to package instructions. Drain and rinse with cold water.
- In a blender, combine avocados, lemon juice, olive oil, garlic, salt, and pepper. Blend until smooth.
- In a large bowl, toss the cooled pasta with the avocado sauce.
- Add the cherry tomatoes, cucumber, red onion, and fresh herbs. Toss gently to combine.
- Adjust seasoning as needed and serve immediately.
