Each bite is crunchy on the outside, tender on the inside, and bursting with flavor from a savory Parmesan-herb coating. Whether you serve it as a side, snack, or appetizer, this easy air fryer recipe is going to become a favorite in your kitchen. Perfect for busy weeknights, family dinners, or even entertaining. Plus, it’s customizable, kid-approved, and air-fried to perfection without the need for excess oil.

Ingredients

  • 2 medium zucchini, sliced into ½-inch rounds
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • ⅓ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  • Preheat air fryer to 400°F (200°C).
  • Slice zucchini and pat dry.
  • In one bowl, beat the eggs. In another, mix panko, Parmesan, and seasonings.
  • Dip zucchini slices in egg, then coat in breadcrumb mixture.
  • Place in air fryer basket in a single layer. Spray with oil.
  • Air fry for 10–12 minutes, flipping halfway through.
  • Serve hot with dipping sauce of choice.

Notes

  • Salting zucchini and letting it sit helps reduce moisture for a crispier bite.
  • For gluten-free, use GF breadcrumbs. For low-carb, try almond flour or crushed pork rinds.
  • Try different seasonings for fun variations—like Cajun or BBQ spice.
