Ingredients
- 2 medium zucchinis
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs

- Salt and freshly ground black pepper, to taste
- Olive oil spray
Instructions
- Slice zucchinis into fry shapes and pat dry.
- Prepare three bowls: seasoned flour, beaten eggs, breadcrumb mixture with Parmesan and spices.
- Dredge zucchini sticks in flour, dip in eggs, then coat with breadcrumb mixture.
- Preheat air fryer to 400°F (200°C).
