This creamy, flavorful white chicken chili is a cozy, comforting dish perfect for cold evenings or casual gatherings. - 1.5 lbs boneless, skinless chicken breasts or thighs
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- ½ cup cream or half-and-half
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp oregano
- Pinch of cayenne
- Salt and pepper to taste
- Optional: 1 cup corn, diced bell peppers, fresh cilantro
Instructions
- Heat oil in a large pot over medium heat. Sauté onions until translucent, add garlic for 1 minute.
- Stir in spices and toast for 30 seconds.
- Add green chilies and chicken broth, bring to a gentle simmer.
- Add chicken, simmer until cooked through.
- Stir in beans, simmer 10 minutes.
- Reduce heat, add cream, taste, and adjust seasoning.
- Optional: add corn, bell peppers, or herbs. Serve hot with toppings.
Notes
- Toast spices for better flavor.
- Add cream at the end to prevent curdling.
- Let chili rest 10–15 minutes before serving for optimal flavor.
