Ingredients

  • 2 cups cherry tomatoes, halved
  • 1 large cucumber (or 2 Persian cucumbers), sliced
  • 1/2 red onion, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt, to taste
  • Fresh ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley or basil


Instructions

  • Rinse and slice the tomatoes and cucumbers. Add to a large bowl.
  • Thinly slice the red onion and add to the bowl.
  • In a small bowl, whisk together olive oil, vinegar, salt, and pepper.
