Description

A comforting, savory dish that’s easy to make and packed with flavor. This Teriyaki Chicken Bowl features tender chicken coated in a glossy, sweet-savory sauce, served over a bed of rice with your favorite veggies. Perfect for a quick dinner, and customizable to suit your preferences.


Ingredients

  • 1 lb chicken breasts or thighs, cut into bite-sized pieces
  • ¼ cup soy sauce or tamari (for gluten-free)
  • 3 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 cup cooked rice (white or brown)
  • Optional veggies: broccoli, bell peppers, carrots, etc.
  • Garnishes: sesame seeds, chopped green onions, cilantro (optional)


Instructions

  • Heat sesame oil in a large skillet over medium-high heat.
  • Add chicken pieces and cook for 5-7 minutes, or until golden brown.
  • Remove the chicken from the pan and set aside.
  • In the same pan, sauté garlic and ginger for 1 minute, then add soy sauce, honey, rice vinegar, and a splash of water.
  • Stir the sauce and bring it to a simmer.
  • Dissolve cornstarch in a bit of cold water, add to the sauce, and cook for 2-3 minutes until thickened.
  • Add the chicken back to the pan, toss to coat in the sauce, and simmer for 2 minutes.
  • Serve over cooked rice with optional veggies and garnishes.
