Ingredients
- 1 lb chicken breasts or thighs, cut into bite-sized pieces
- ¼ cup soy sauce or tamari (for gluten-free)
- 3 tablespoons honey or brown sugar
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 1 cup cooked rice (white or brown)
- Optional veggies: broccoli, bell peppers, carrots, etc.
- Garnishes: sesame seeds, chopped green onions, cilantro (optional)
Instructions
- Heat sesame oil in a large skillet over medium-high heat.
- Add chicken pieces and cook for 5-7 minutes, or until golden brown.
- Remove the chicken from the pan and set aside.
- In the same pan, sauté garlic and ginger for 1 minute, then add soy sauce, honey, rice vinegar, and a splash of water.
- Stir the sauce and bring it to a simmer.
- Dissolve cornstarch in a bit of cold water, add to the sauce, and cook for 2-3 minutes until thickened.
- Add the chicken back to the pan, toss to coat in the sauce, and simmer for 2 minutes.
- Serve over cooked rice with optional veggies and garnishes.
