- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 (15 oz) can black beans, drained and rinsed
- 1 (10 oz) can diced tomatoes with green chilies
- ½ cup frozen or canned corn (optional)
- ½ cup sour cream
- 2 cups shredded cheddar or Mexican blend cheese
- 2 cups crushed tortilla chips or 6 flour tortillas
- Optional toppings: cilantro, avocado, green onions, jalapeños
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, sauté onion until soft. Add garlic and cook for 1 more minute.
- Add ground beef and cook until browned. Drain fat.
- Stir in taco seasoning and ¼ cup water. Simmer 5 minutes.
- Mix in beans, tomatoes, and corn. Let simmer another 5 minutes.
- Turn off heat and stir in sour cream.
- In a 9×13 dish, layer half of the crushed chips or tortillas, meat mixture, and cheese. Repeat.
- Top with remaining chips and cheese.
- Cover with foil and bake for 15 minutes. Remove foil and bake 10 more minutes.
- Let rest for 10 minutes. Garnish and serve.
