  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk or cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger (optional)
  • 1 unbaked 9-inch pie crust


Instructions

  • Roast sweet potatoes until tender, then peel and mash until smooth.
  • Prepare or unroll pie crust and fit into a 9-inch pan; chill while making filling.
  • Combine mashed sweet potatoes, sugars, butter, milk, eggs, vanilla, and spices until smooth.
  • Pour filling into pie crust and smooth the top.
  • Bake at 350°F (175°C) for 50-60 minutes, until the center jiggles slightly.
  • Cool at least 30 minutes before slicing and serving.
