  • 1/2 cup vegetable oil or melted butter

Instructions

  • Preheat oven to 350°F (175°C) and grease a loaf pan.
  • Roast and mash sweet potatoes.
  • In a bowl, whisk sugar, eggs, and oil; add vanilla and sweet potato.
  • Combine dry ingredients separately, then fold into wet mixture until just combined.
  • Gently fold in optional nuts or raisins.
  • Pour batter into prepared pan and smooth the top.
  • Bake 50-60 minutes, checking doneness with a toothpick.
  • Cool 10 minutes in pan, then transfer to a wire rack to cool completely.
