  • 4 medium summer squash, sliced
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup milk
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 2 tbsp butter, melted
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste


Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, melt butter over medium heat and sauté the squash for 5-7 minutes, until softened.
  • In a large bowl, combine the eggs, milk, garlic powder, onion powder, salt, and pepper. Stir in the sautéed squash.
  • Add half of the breadcrumbs and cheese to the mixture, then pour everything into a greased casserole dish.
  • Top with the remaining breadcrumbs and a few pats of butter.
  • Bake for 25-30 minutes, until the top is golden brown and the casserole is bubbling.
  • Let it cool for a few minutes before serving.

Notes

  • You can add crumbled bacon, other cheeses, or herbs for extra flavor.
  • To make it gluten-free, use gluten-free breadcrumbs or crushed gluten-free crackers.
