- 4 medium summer squash, sliced
- 1 cup shredded sharp cheddar cheese
- 1/2 cup milk
- 2 eggs, beaten
- 1 cup breadcrumbs
- 2 tbsp butter, melted
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, melt butter over medium heat and sauté the squash for 5-7 minutes, until softened.
- In a large bowl, combine the eggs, milk, garlic powder, onion powder, salt, and pepper. Stir in the sautéed squash.
- Add half of the breadcrumbs and cheese to the mixture, then pour everything into a greased casserole dish.
- Top with the remaining breadcrumbs and a few pats of butter.
- Bake for 25-30 minutes, until the top is golden brown and the casserole is bubbling.
- Let it cool for a few minutes before serving.
Notes
- You can add crumbled bacon, other cheeses, or herbs for extra flavor.
- To make it gluten-free, use gluten-free breadcrumbs or crushed gluten-free crackers.
