- 8 rice paper wrappers
- 12 medium shrimp, cooked & halved
- 1 cup lettuce, thinly sliced
- 1 cucumber, julienned
- 1 carrot, julienned
- ½ cup rice vermicelli, cooked
- ¼ cup mint, cilantro, and Thai basil
- Peanut sauce or nuoc cham for dipping
Instructions
- Prep all fillings: Cook noodles, slice veggies, and prepare protein.
- Dip rice paper in warm water for 5-10 sec until pliable. Lay flat on a damp towel.
- Layer lettuce, noodles, veggies, herbs, and shrimp near the bottom third.
- Fold sides in, then roll tightly from the bottom up.
- Repeat and serve with dipping sauce.
