  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • 35 tablespoons ice water
  • 5 cups fresh strawberries, hulled
  • ¾ cup granulated sugar
  • 3 tablespoons cornstarch
  • ¼ cup water
  • 1 tablespoon lemon juice
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Make the crust: Combine flour and salt, cut in cold butter, and add ice water until dough forms. Roll out, fit into pie dish, and blind bake until golden. Let cool.
  2. Make the glaze: Purée 1 ½ cups strawberries. Cook with sugar, cornstarch, lemon juice, and water until thickened and glossy. Let cool.
  3. Assemble: Slice remaining strawberries. Pour glaze into cooled crust, then layer fresh berries on top. Chill for at least 2–3 hours.
  4. Serve: Top with whipped cream or ice cream.
