Ingredients

- ¾ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 12-15 fresh strawberries, sliced
Instructions
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press mixture into mini muffin tin or silicone mold cups. Chill while preparing filling.
- Beat softened cream cheese and powdered sugar together until smooth and creamy. Mix in vanilla extract.
- Whip heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture until light and fluffy.
- Spoon or pipe cheesecake filling over crust in molds. Smooth tops evenly.
- Top each bite with fresh strawberry slices.
- Cover and refrigerate for at least 2 hours until set.
- Carefully remove bites from molds and serve chilled.
