Ingredients

  • 1 ½ cups graham cracker crumbs (optional for crust)
  • 6 tablespoons unsalted butter, melted (if using crust)
  • 16 oz (450g) cream cheese, softened
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 12-15 fresh strawberries, sliced


Instructions

  • In a bowl, mix graham cracker crumbs and melted butter until combined. Press mixture into mini muffin tin or silicone mold cups. Chill while preparing filling.
  • Beat softened cream cheese and powdered sugar together until smooth and creamy. Mix in vanilla extract.
  • Whip heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture until light and fluffy.
  • Spoon or pipe cheesecake filling over crust in molds. Smooth tops evenly.
  • Top each bite with fresh strawberry slices.
  • Cover and refrigerate for at least 2 hours until set.
  • Carefully remove bites from molds and serve chilled.

Notes

  • For a crustless version, skip the graham cracker base and spoon filling directly into molds.
