- 4 boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 4 hoagie rolls
- 4 slices provolone cheese (or mozzarella)
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Sauté the onions and bell peppers for 5 minutes until softened.
- Place the chicken breasts in the slow cooker. Top with sautéed vegetables.
- Pour in chicken broth and season with garlic, salt, and pepper.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Once cooked, shred the chicken and mix with the vegetables in the slow cooker.
- Toast the hoagie rolls and top with the chicken mixture. Add a slice of cheese and let it melt.
