Description

Tender chicken, sautéed bell peppers, and melted cheese come together in a soft hoagie roll to create the ultimate comfort food. Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 4 hoagie rolls
  • 4 slices provolone cheese (or mozzarella)
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté the onions and bell peppers for 5 minutes until softened.
  2. Place the chicken breasts in the slow cooker. Top with sautéed vegetables.
  3. Pour in chicken broth and season with garlic, salt, and pepper.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken and mix with the vegetables in the slow cooker.
  6. Toast the hoagie rolls and top with the chicken mixture. Add a slice of cheese and let it melt.
  7. Serve and enjoy!
