Ingredients
- 1.5 to 2 lbs chicken thighs or breasts
- 4 Yukon Gold potatoes, quartered
- 3 carrots, thickly sliced
- 2 celery stalks, chopped
- 1 small onion, diced
- 3 garlic cloves, minced
- 1½ cups chicken broth (low sodium)
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- ½ teaspoon dried rosemary
- Salt and pepper, to taste
- ¾ cup heavy cream or 4 oz cream cheese
- Optional: 1 cup mushrooms, ½ cup frozen peas
- Optional: 1 tablespoon cornstarch or flour, for thickening
Instructions
- Prep vegetables: wash, peel, chop.
- Sear chicken in a hot skillet if desired.
- Layer carrots, potatoes, celery, and onion in the slow cooker.
- Add chicken on top.
- Whisk together broth, mustard, garlic, herbs, salt, and pepper. Pour over everything.
- Cover and cook on low 6–7 hours or high 3–4 hours.
- Stir in cream or cream cheese in the last 30 minutes.
- Add mushrooms and peas near the end.
- Thicken with slurry if needed.
- Serve hot with fresh parsley.
