Ingredients

  • 1.5 to 2 lbs chicken thighs or breasts
  • 4 Yukon Gold potatoes, quartered
  • 3 carrots, thickly sliced
  • 2 celery stalks, chopped
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1½ cups chicken broth (low sodium)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • Salt and pepper, to taste
  • ¾ cup heavy cream or 4 oz cream cheese
  • Optional: 1 cup mushrooms, ½ cup frozen peas
  • Optional: 1 tablespoon cornstarch or flour, for thickening

Instructions

  • Prep vegetables: wash, peel, chop.
  • Sear chicken in a hot skillet if desired.
  • Layer carrots, potatoes, celery, and onion in the slow cooker.
  • Add chicken on top.
  • Whisk together broth, mustard, garlic, herbs, salt, and pepper. Pour over everything.
  • Cover and cook on low 6–7 hours or high 3–4 hours.
  • Stir in cream or cream cheese in the last 30 minutes.
  • Add mushrooms and peas near the end.
  • Thicken with slurry if needed.
  • Serve hot with fresh parsley.

Notes

  • For a thicker sauce, make sure to thicken with a cornstarch slurry in the last 30 minutes.
  • Chicken thighs stay juicier than breasts in the slow cooker.
  • Add a splash of lemon juice at the end for brightness.
  • Make a double batch to freeze for future meals.
