Ingredients

8 oz short pasta (rotini, fusilli, or bowtie)

1 lb medium shrimp (peeled and deveined)

1 tbsp olive oil

1 cup cherry tomatoes, halved

½ cucumber, diced

½ red onion, finely chopped

1 bell pepper, chopped

1 celery stalk, thinly sliced

2 tbsp fresh dill or parsley, chopped
For the dressing:

½ cup mayonnaise

¼ cup Greek yogurt

1 tbsp Dijon mustard

1 tbsp lemon juice

1 garlic clove, minced

Salt and black pepper to taste
Instructions
- Cook pasta in salted boiling water until al dente. Drain and rinse under cold water.
- Heat olive oil in a skillet. Season shrimp and sauté for 2–3 minutes per side until pink and opaque. Let cool.
- In a small bowl, whisk together mayonnaise, Greek yogurt, mustard, lemon juice, garlic, salt, and pepper.
- Combine pasta, shrimp, vegetables, and herbs in a large bowl.
- Pour dressing over the top and toss gently until everything is well coated.
- Chill for at least 20 minutes before serving.
Notes
- You can prep the salad and dressing separately to keep everything fresh until serving.
- If making ahead, add extra lemon juice or a spoonful of dressing just before serving to refresh the flavors.
- Use different herbs like basil or chives if dill isn’t available.
