Ingredients

  • 1 lb large raw shrimp, peeled and deveined
  • 12 oz fettuccine pasta
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt and black pepper to taste
  • 2 tbsp chopped parsley (optional)


Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve 1 cup pasta water, drain and set aside.

  2. In a skillet, heat olive oil and 1 tbsp butter over medium heat. Add shrimp, season lightly with salt and pepper, and sauté 2-3 minutes per side. Remove and set aside.

  3. In the same skillet, add remaining butter and minced garlic. Cook until fragrant (about 1 minute).

  4. Pour in heavy cream and bring to a gentle simmer. Let reduce for 3-5 minutes.

  5. Stir in Parmesan cheese gradually. Season with salt and pepper.

  6. Add cooked pasta and toss to coat. Use reserved pasta water to loosen sauce if needed.

  7. Return shrimp to the skillet, toss gently, and heat through.

  8. Garnish with parsley and serve hot.
