  • 1 lb Italian sausage (mild or hot, casing removed if linked)
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 (14 oz) can crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 9 oz cheese tortellini (fresh or frozen)
  • 2 cups chopped kale or spinach
  • ½ cup heavy cream
  • Fresh parsley and grated Parmesan (for garnish)


Instructions

  1. Brown the sausage in olive oil in a large pot over medium heat. Remove and set aside.

  2. In the same pot, sauté onion until translucent. Add garlic and cook for 30 seconds.

  3. Add crushed tomatoes and let simmer for 2 minutes.

  4. Pour in broth, return sausage to pot, add seasoning. Bring to a gentle boil.

  5. Simmer for 10 minutes, then add tortellini. Cook until just tender (5–7 mins).

  6. Stir in greens and cook until wilted. Add heavy cream and simmer gently.

  7. Adjust seasoning. Garnish and serve warm.

Notes

Add a splash of white wine after sautéing onion for more depth.

Use spinach for a quicker wilted green option.

For a thicker broth, stir in 1 tbsp of tomato paste.
