Instructions

  • Preheat oven to 400°F (200°C).
  • In a large bowl, toss potatoes, peppers, and onions with olive oil, garlic, herbs, salt, and pepper.
  • Add sliced sausage and mix well to coat everything evenly.
  • Spread mixture on a large baking sheet in a single layer.
  • Roast for 30–35 minutes, stirring halfway, until potatoes are golden and sausage is browned.
  • Garnish with parsley or a drizzle of balsamic glaze before serving.
