  • 8 oz fettuccine pasta
  • 1 tablespoon olive oil
  • 1 lb Italian sausage (casings removed)
  • 3 tablespoons butter
  • 3 garlic cloves, minced
  • 1½ cups heavy cream
  • 1¼ cups freshly grated Parmesan cheese
  • Salt and black pepper to taste
  • Optional: red pepper flakes, parsley for garnish


Instructions

  • Boil pasta in salted water until al dente. Reserve ½ cup pasta water and drain.
  • In a skillet, cook sausage until browned. Set aside.
  • Melt butter in the same pan, add garlic, and sauté for 1 minute.
  • Stir in cream and simmer for 3–4 minutes.
  • Gradually whisk in Parmesan until smooth and thickened.
  • Return sausage to the skillet. Simmer for 2–3 minutes.
  • Toss in pasta. Use reserved water to loosen the sauce if needed.
  • Season with salt and pepper. Garnish with parsley and extra cheese.
