- 1 cup butter, softened
- 1 ½ cups granulated sugar
- 3 large eggs
- 1 cup buttermilk
- 1 tsp vanilla extract
- 1–2 tsp purple gel food coloring
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a bowl, sift together flour, baking powder, and salt.
- Cream together butter and sugar until fluffy. Add eggs one at a time, beating well after each addition.
- Mix in buttermilk and vanilla extract. Add purple food coloring.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Pour the batter evenly into the prepared pans and bake for 25-30 minutes.
- Allow the cakes to cool completely before frosting.
- To make the frosting, beat together softened cream cheese and powdered sugar until smooth. Add vanilla extract.
- Frost the cooled cakes with the cream cheese frosting. Serve and enjoy!
