- 3 very ripe bananas
- 1 cup pumpkin puree
- 1/2 cup brown sugar, packed
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder

- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 2 large eggs
- 1/3 cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
- Optional: 1/2 cup chopped nuts or chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Prepare a 9×5-inch loaf pan.
- Mash bananas in a large bowl, then stir in pumpkin puree, brown sugar, eggs, oil, and vanilla.
- In another bowl, whisk flours, baking soda, baking powder, salt, and spices.
- Fold dry ingredients into wet mixture gently until just combined.
- Add optional nuts or chocolate chips.
- Pour batter into prepared pan and smooth top.
- Bake 50-60 minutes or until toothpick comes out clean.
- Cool 15 minutes in pan, then remove and cool completely before slicing.
Notes
- Use very ripe bananas for best sweetness.
- Don’t overmix to keep bread tender.
- Toast nuts before adding for extra flavor.
- Store tightly wrapped at room temperature or freeze for longer freshness.
