  • 1 cup pumpkin puree
  • 1/2 cup brown sugar, packed
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 2 large eggs
  • 1/3 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup chopped nuts or chocolate chips


Instructions

  • Preheat oven to 350°F (175°C). Prepare a 9×5-inch loaf pan.
  • Mash bananas in a large bowl, then stir in pumpkin puree, brown sugar, eggs, oil, and vanilla.
  • In another bowl, whisk flours, baking soda, baking powder, salt, and spices.
  • Fold dry ingredients into wet mixture gently until just combined.
  • Add optional nuts or chocolate chips.
  • Pour batter into prepared pan and smooth top.
  • Bake 50-60 minutes or until toothpick comes out clean.
  • Cool 15 minutes in pan, then remove and cool completely before slicing.

Notes

  • Use very ripe bananas for best sweetness.
  • Don’t overmix to keep bread tender.
