Ingredients
- 2 lbs boneless skinless chicken breasts or thighs
- 1 medium onion, thinly sliced
- 3 garlic cloves, minced
- 1 ½ cups BBQ sauce (plus more for serving)
- 2 tbsp apple cider vinegar
- 2 tbsp brown sugar
- 1 tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Slice onion and mince garlic; place in bottom of slow cooker.
- Lay chicken over the onion and garlic base.
- In a bowl, mix BBQ sauce, vinegar, brown sugar, paprika, salt, and pepper.
- Pour the sauce over the chicken. Do not stir.
- Cover and cook on LOW for 6–8 hours or HIGH for 4–5 hours.
- Remove chicken, shred with two forks, then return to pot and stir into sauce.
- Let sit for 15–20 minutes on warm before serving.
- Serve hot on buns, over rice, or with your favorite sides.
