  • 12 oz smoked sausage, sliced
  • 1 medium onion, chopped
  • 1 bell pepper, chopped (optional)

  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp dried rosemary
  • Salt and pepper to taste


Instructions

  • Preheat oven to 400°F (200°C).
  • Toss potatoes with olive oil, paprika, garlic powder, rosemary, salt, and pepper.
  • Spread on a baking sheet and roast for 20 minutes.
  • Add sausage, onion, and bell pepper to the potatoes, toss, and roast for another 20–25 minutes, stirring halfway.
