Ingredients

Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch cake pans. Line with parchment paper.
- Prepare the batter: In a bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla and coconut extract.
- Combine: Alternately add dry ingredients and coconut milk + pineapple juice, mixing just until combined. Fold in shredded coconut.
