  • 2 cloves garlic, minced
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp honey
  • 1 tsp grated ginger
  • 2 tbsp olive oil
  • 1 cup chicken broth (or water)
  • Fresh cilantro, chopped (for garnish)
  • Green onions, chopped (for garnish)

Instructions

  1. Cut chicken into bite-sized pieces. Marinate with soy sauce, honey, ginger, and garlic for 15-20 minutes.
  2. Cook rice according to package instructions, using chicken broth for added flavor.
  3. Heat olive oil in a skillet. Sauté bell peppers and onions for 5 minutes until softened. Add garlic and cook for 1 minute.
  4. Add marinated chicken to the skillet. Cook for 5-7 minutes until browned and cooked through.
  5. Stir in pineapple chunks. Cook for 2 minutes, allowing flavors to meld.
  6. Serve chicken and pineapple mixture over rice, garnished with cilantro and green onions.

Notes

  • For a creamier version, add a splash of coconut milk to the skillet when adding the pineapple.
