Instructions
- Cut chicken into bite-sized pieces. Marinate with soy sauce, honey, ginger, and garlic for 15-20 minutes.
- Cook rice according to package instructions, using chicken broth for added flavor.
- Heat olive oil in a skillet. Sauté bell peppers and onions for 5 minutes until softened. Add garlic and cook for 1 minute.
- Add marinated chicken to the skillet. Cook for 5-7 minutes until browned and cooked through.
- Stir in pineapple chunks. Cook for 2 minutes, allowing flavors to meld.
- Serve chicken and pineapple mixture over rice, garnished with cilantro and green onions.
Notes
- For a creamier version, add a splash of coconut milk to the skillet when adding the pineapple.
