Ingredients
- 3 ripe peaches, sliced
- 5 oz arugula or mixed greens
- 1/2 cup crumbled goat cheese
- 1/3 cup toasted pecans or walnuts
- 1/4 red onion, thinly sliced (optional)
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 1 tsp honey
- 1 tsp Dijon mustard
- Salt and pepper, to taste
Instructions
- Toast the nuts in a dry skillet over medium heat until golden. Let cool.
- In a small jar, whisk together olive oil, balsamic vinegar, mustard, honey, salt, and pepper.
- Slice peaches and set aside.
- Layer greens on a large serving dish.
- Add peaches, goat cheese, onion (if using), and nuts.
- Drizzle with dressing just before serving and toss gently.
