Description

A fresh and elegant salad combining juicy, ripe peaches with creamy burrata cheese, peppery arugula, fragrant basil, and a tangy balsamic glaze. This salad is a celebration of summer’s best flavors and textures, perfect for light lunches, appetizers, or entertaining guests with minimal effort but maximum impact.

Ingredients

  • 2-3 ripe peaches, sliced
  • 8 oz fresh burrata cheese
  • 4 cups arugula or mixed baby greens
  • A handful of fresh basil leaves
  • 2 tbsp balsamic glaze or balsamic vinaigrette
  • Flaky sea salt, to taste
  • Freshly cracked black pepper, to taste
  • Optional: toasted pistachios or almonds for crunch

Instructions

  • Wash and slice peaches into thin wedges.
  • Arrange arugula or greens on a serving platter.
  • Tear burrata into portions and place over the greens.
  • Arrange peach slices around and over the burrata.
  • Scatter fresh basil leaves on top.
  • Drizzle with balsamic glaze or vinaigrette.
  • Season with flaky sea salt and cracked pepper.
  • Sprinkle toasted nuts if using.
  • Serve immediately.

Notes

  • Use peaches that are ripe but firm for best texture. Burrata is best fresh and at room temperature. Adjust balsamic glaze amount to taste, avoiding over-dressing. For an extra savory twist, add thin slices of prosciutto.
