Ingredients
- 4-5 medium patty pan squash, sliced
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- Salt and black pepper to taste
- 1 tablespoon fresh thyme or parsley, chopped
- 1 teaspoon lemon juice or zest (optional)
- 1/4 cup grated Parmesan or crumbled feta cheese (optional)
Instructions
- Wash and slice patty pan squash into ¼ inch thick pieces.
- Heat olive oil in a skillet over medium heat; sauté onions until translucent.
- Add garlic, cook for 1 minute.
- Add squash slices, season with salt and pepper, and stir to coat.
- Cover and cook for 10 minutes, stirring occasionally until tender but slightly crisp.
- Remove lid, cook 2-3 minutes more to caramelize edges.
- Stir in herbs and lemon juice.
- Optionally sprinkle cheese on top, let it melt slightly.
