Ingredients

  • 4-5 medium patty pan squash, sliced
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • Salt and black pepper to taste
  • 1 tablespoon fresh thyme or parsley, chopped
  • 1 teaspoon lemon juice or zest (optional)
  • 1/4 cup grated Parmesan or crumbled feta cheese (optional)


Instructions

  • Wash and slice patty pan squash into ¼ inch thick pieces.
  • Heat olive oil in a skillet over medium heat; sauté onions until translucent.
  • Add garlic, cook for 1 minute.
  • Add squash slices, season with salt and pepper, and stir to coat.
  • Cover and cook for 10 minutes, stirring occasionally until tender but slightly crisp.
  • Remove lid, cook 2-3 minutes more to caramelize edges.
  • Stir in herbs and lemon juice.
  • Optionally sprinkle cheese on top, let it melt slightly.
  • Serve warm.

Notes

  • For best results, slice squash evenly and don’t overcrowd the pan. Fresh herbs add vibrancy, but dried herbs work in a pinch. Adjust seasoning to taste and enjoy immediately for best texture.
