Description
This easy oven-fried potatoes & onions recipe delivers crispy, golden-brown potatoes with perfectly caramelized onions—all baked to perfection! A simple, flavorful side dish that pairs beautifully with breakfast, lunch, or dinner.
Ingredients
Scale
- 4 medium russet potatoes, cut into wedges or cubes
- 1 large yellow onion, sliced into thin half-moons
- 3 tbsp olive oil (or melted butter)
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- Optional: fresh herbs (thyme, rosemary, parsley), Parmesan cheese
Instructions
- Prep the potatoes: Wash, peel (optional), and cut into evenly sized cubes or wedges.
- Soak (optional but recommended): Submerge in cold water for at least 30 minutes to remove excess starch.
- Dry thoroughly: Drain and pat the potatoes completely dry.
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss with seasonings: In a large bowl, mix potatoes and onions with olive oil, garlic powder, paprika, salt, and pepper. Coat evenly.
- Spread on the baking sheet: Arrange in a single layer, making sure they aren’t overlapping.
- Roast for 35-40 minutes, flipping halfway through, until crispy and golden brown.
- Optional: Broil for 2-3 minutes for extra crispiness.
- Garnish and serve immediately.
Notes
- For best results, soak potatoes for at least 30 minutes before roasting.
- If adding onions later, toss them in after 15 minutes of baking to prevent burning.
- For extra crispiness, use a cast-iron skillet instead of a baking sheet.
- Great add-ins: Try smoked paprika, Cajun seasoning, or a dash of chili powder for a different flavor profile.
