- 4 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 large onion, sliced
- 4 cloves garlic, minced
- 2 cups chicken broth
- 2 tablespoons soy sauce
- 2 teaspoons freshly cracked black pepper
- Salt, to taste
- Fresh thyme (optional)
Instructions
- Heat olive oil in a large pot over medium-high heat. Season chicken with salt and pepper, and sear skin-side down until golden brown, about 5-7 minutes per side. Remove from pot.
- In the same pot, sauté onion until softened, about 3 minutes. Add garlic and cook for 1 more minute.
- Pour in chicken broth and soy sauce, scraping the bottom of the pot to release browned bits.
- Return chicken to the pot, skin-side up. Sprinkle with additional black pepper. Cover and simmer for 20-25 minutes, or until chicken is cooked through.
- Remove chicken and let the sauce reduce for 5 minutes over medium-high heat. Return chicken to the pot and spoon sauce over it before serving.
Notes
- For a creamier version, add 2 tablespoons of heavy cream in the last few minutes of cooking.
- Adjust the amount of black pepper based on your preference for heat.
