Description

This One Pot Black Pepper Chicken is a quick, flavorful, and comforting meal perfect for any busy weeknight. The crispy chicken thighs are cooked in a rich, peppery sauce that’s packed with savory flavors. With minimal prep and cleanup, this dish will quickly become a favorite in your home.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 2 tablespoons soy sauce
  • 2 teaspoons freshly cracked black pepper
  • Salt, to taste
  • Fresh thyme (optional)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season chicken with salt and pepper, and sear skin-side down until golden brown, about 5-7 minutes per side. Remove from pot.
  2. In the same pot, sauté onion until softened, about 3 minutes. Add garlic and cook for 1 more minute.
  3. Pour in chicken broth and soy sauce, scraping the bottom of the pot to release browned bits.
  4. Return chicken to the pot, skin-side up. Sprinkle with additional black pepper. Cover and simmer for 20-25 minutes, or until chicken is cooked through.
  5. Remove chicken and let the sauce reduce for 5 minutes over medium-high heat. Return chicken to the pot and spoon sauce over it before serving.

Notes

  • For a creamier version, add 2 tablespoons of heavy cream in the last few minutes of cooking.
  • Adjust the amount of black pepper based on your preference for heat.
