- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 4 medium potatoes, halved
- 4 large carrots, peeled and cut into rounds
- 1 red bell pepper, chopped
- 1 lemon, sliced
Instructions
- Preheat the oven to 400°F (200°C).
- Season the chicken breasts with olive oil, paprika, onion powder, salt, and pepper.
- Toss the potatoes, carrots, and bell peppers in olive oil, salt, and pepper. Arrange them around the chicken in a large ovenproof pan.
- Sear the chicken in a hot pan for 3-4 minutes on each side to brown it.
- Add garlic, fresh rosemary, and thyme to the pan.
- Roast the chicken and vegetables in the preheated oven for 25-30 minutes, or until the chicken reaches 165°F (74°C).
- Squeeze fresh lemon juice over the dish and serve.
Notes
- Use chicken thighs for juicier meat if desired.
- Add a splash of white wine for extra flavor.
- Allow the chicken to rest for 5 minutes before serving.
