  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 4 medium potatoes, halved
  • 4 large carrots, peeled and cut into rounds
  • 1 red bell pepper, chopped
  • 1 lemon, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken breasts with olive oil, paprika, onion powder, salt, and pepper.
  3. Toss the potatoes, carrots, and bell peppers in olive oil, salt, and pepper. Arrange them around the chicken in a large ovenproof pan.
  4. Sear the chicken in a hot pan for 3-4 minutes on each side to brown it.
  5. Add garlic, fresh rosemary, and thyme to the pan.
  6. Roast the chicken and vegetables in the preheated oven for 25-30 minutes, or until the chicken reaches 165°F (74°C).
  7. Squeeze fresh lemon juice over the dish and serve.

Notes

  • Use chicken thighs for juicier meat if desired.
  • Add a splash of white wine for extra flavor.
  • Allow the chicken to rest for 5 minutes before serving.
