Ingredients

  • 1 prepared pie crust (store-bought or homemade)
  • 2 cups whole milk
  • 3/4 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • Pinch of salt
  • 3 large egg yolks
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your pie crust and bake it according to instructions, then set aside.
  3. For the filling, whisk together milk, sugar, cocoa powder, cornstarch, and salt in a saucepan. Cook over medium heat, whisking constantly, until the mixture thickens.
  4. Temper the egg yolks by slowly adding some of the hot mixture into the yolks, then whisk the yolks back into the saucepan.
  5. Cook for another 2-3 minutes, then stir in butter and vanilla. Pour into the prepared crust.
  6. For the meringue, beat egg whites with cream of tartar until soft peaks form. Gradually add sugar until stiff peaks form. Spread over the chocolate filling.
  7. Bake for 8-10 minutes, or until the meringue is golden.
  8. Let cool for 30 minutes, then refrigerate for 2-3 hours before serving.
