Ingredients

  • 1 ½ cups graham cracker crumbs or crushed digestive biscuits
  • 6 tablespoons unsalted butter, melted
  • 2 cups fresh strawberries, sliced
  • 8 oz (225 g) cream cheese, softened
  • 1 cup heavy cream, chilled
  • ½ cup granulated sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice


Instructions

  • Mix graham cracker crumbs with melted butter until evenly combined. Press firmly into the base of your serving dish.
  • Whip heavy cream with 2 tablespoons sugar and vanilla extract until soft peaks form.
  • In a separate bowl, beat cream cheese with remaining sugar and lemon juice until smooth.
  • Gently fold whipped cream into cream cheese mixture until combined.
  • Layer half the cream mixture over the crust, then add half the sliced strawberries. Repeat layers, finishing with cream on top.
