Instructions
- Wash and slice the cucumbers, halve the cherry tomatoes, and thinly slice the red onion.
- Place cucumbers, tomatoes, onions, and olives in a large mixing bowl.
- Crumble the feta cheese over the vegetables.
- Sprinkle chopped parsley and optional mint/dill on top.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Drizzle the dressing over the salad and gently toss to combine.
