  • 2 firm cucumbers, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • ½ cup Kalamata olives, sliced
  • ½ cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh mint or dill, chopped (optional)
  • 3 tablespoons extra virgin olive oil

  • Salt and freshly cracked black pepper, to taste


Instructions

  • Wash and slice the cucumbers, halve the cherry tomatoes, and thinly slice the red onion.
  • Place cucumbers, tomatoes, onions, and olives in a large mixing bowl.
  • Crumble the feta cheese over the vegetables.
  • Sprinkle chopped parsley and optional mint/dill on top.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  • Drizzle the dressing over the salad and gently toss to combine.
  • Taste and adjust seasoning as needed. Serve immediately or chill for a few minutes.
