1. For the Meatloaf:

  • 2 lbs ground beef (80/20)
  • 1 cup breadcrumbs
  • 2 eggs
  • ½ cup milk
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • ¼ cup ketchup
  • 1 tbsp mustard
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika

2. For the Glaze:

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 tsp apple cider vinegar

3. For the Mashed Potatoes:

  • 4 large russet potatoes
  • 4 tbsp butter
  • ½ cup heavy cream
  • 1 tsp salt

Instructions

  1. Preheat oven to 375°F and grease a baking dish.
  2. In a large bowl, mix ground beef, breadcrumbs, eggs, milk, onion, garlic, Worcestershire sauce, ketchup, mustard, salt, pepper, and paprika until just combined.
  3. Shape into a loaf in the baking dish.
  4. In a small bowl, mix ketchup, brown sugar, Dijon mustard, and vinegar. Spread half over the meatloaf.
  5. Bake for 45 minutes, then spread remaining glaze and bake for another 15 minutes.
  6. While the meatloaf bakes, boil peeled and chopped potatoes for 15-20 minutes until fork-tender.
  7. Drain potatoes and mash with butter, cream, and salt until smooth.
  8. Let the meatloaf rest for 10 minutes, then slice and serve with mashed potatoes.

Notes

  • Use a thermometer to ensure the meatloaf reaches 160°F.
  • For extra creamy mashed potatoes, use a potato ricer.
