1. For the Meatloaf:
- 2 lbs ground beef (80/20)
- 1 cup breadcrumbs
- 2 eggs
- ½ cup milk
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- ¼ cup ketchup
- 1 tbsp mustard
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika

- ½ cup ketchup
- 2 tbsp brown sugar
- 1 tbsp Dijon mustard
- 1 tsp apple cider vinegar
3. For the Mashed Potatoes:
- 4 large russet potatoes
- 4 tbsp butter
- ½ cup heavy cream
- 1 tsp salt
Instructions
- Preheat oven to 375°F and grease a baking dish.
- In a large bowl, mix ground beef, breadcrumbs, eggs, milk, onion, garlic, Worcestershire sauce, ketchup, mustard, salt, pepper, and paprika until just combined.
- Shape into a loaf in the baking dish.
- In a small bowl, mix ketchup, brown sugar, Dijon mustard, and vinegar. Spread half over the meatloaf.
- Bake for 45 minutes, then spread remaining glaze and bake for another 15 minutes.
- While the meatloaf bakes, boil peeled and chopped potatoes for 15-20 minutes until fork-tender.
- Drain potatoes and mash with butter, cream, and salt until smooth.
- Let the meatloaf rest for 10 minutes, then slice and serve with mashed potatoes.
Notes
- Use a thermometer to ensure the meatloaf reaches 160°F.
- For extra creamy mashed potatoes, use a potato ricer.
