Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 10 oz fettuccine or linguine pasta
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 1 tbsp olive oil
  • 2 tbsp butter
  • ½ tsp crushed red pepper flakes
  • Salt and pepper to taste

Instructions

  • Cook pasta in salted water until al dente. Reserve ½ cup pasta water.
  • Sear shrimp in olive oil and butter for 1–2 minutes per side; remove and set aside.
  • In the same pan, sauté garlic and sun-dried tomatoes for 1 minute.
  • Pour in heavy cream; simmer gently, then stir in Parmesan until smooth.
  • Add cooked pasta and shrimp back to the pan. Toss well.
  • Adjust consistency with reserved pasta water.
  • Season with salt, pepper, and red pepper flakes.
  • Garnish with basil or parsley and serve warm.
