- 2–4 salmon fillets, skin-on
- Salt and freshly ground black pepper, to taste
- 1–2 tablespoons butter or olive oil
- 2 cloves garlic, minced
- 1 small shallot, finely chopped
- ½ cup heavy cream
- ½ cup freshly grated parmesan cheese
- 2 tablespoons white wine (or broth)
- Juice of ½ lemon
- Fresh herbs for garnish (parsley or chives)
- Optional: pinch of red pepper flakes
Instructions
- Pat salmon dry and season with salt and pepper.
- Heat butter or oil in a skillet over medium-high heat. Cook salmon skin-side down for 4–5 minutes until crispy. Flip and cook 3–4 more minutes. Remove and set aside.
- Sauté garlic and shallots in the same skillet until fragrant. Deglaze with white wine or broth.
- Stir in heavy cream and parmesan until smooth. Season with salt, pepper, and lemon juice.
- Return salmon to skillet and spoon sauce over fillets. Cook 2–3 minutes to meld flavors.
- Garnish with fresh herbs and serve immediately.

- For a lighter version, use half-and-half instead of cream.
- Serve with roasted vegetables, mashed potatoes, or quinoa for a complete meal.
