Ingredients

  • 24 salmon fillets, skin-on
  • Salt and freshly ground black pepper, to taste
  • 12 tablespoons butter or olive oil
  • 2 cloves garlic, minced
  • 1 small shallot, finely chopped
  • ½ cup heavy cream
  • ½ cup freshly grated parmesan cheese
  • 2 tablespoons white wine (or broth)
  • Juice of ½ lemon
  • Fresh herbs for garnish (parsley or chives)
  • Optional: pinch of red pepper flakes


Instructions

  • Pat salmon dry and season with salt and pepper.
  • Heat butter or oil in a skillet over medium-high heat. Cook salmon skin-side down for 4–5 minutes until crispy. Flip and cook 3–4 more minutes. Remove and set aside.
  • Sauté garlic and shallots in the same skillet until fragrant. Deglaze with white wine or broth.
  • Stir in heavy cream and parmesan until smooth. Season with salt, pepper, and lemon juice.
  • Return salmon to skillet and spoon sauce over fillets. Cook 2–3 minutes to meld flavors.
  • Garnish with fresh herbs and serve immediately.

  • For a lighter version, use half-and-half instead of cream.
  • Serve with roasted vegetables, mashed potatoes, or quinoa for a complete meal.
