Description

1. For the Meatballs:

  • 1 lb ground chicken or turkey
  • ½ cup Italian breadcrumbs
  • ¼ cup grated parmesan cheese
  • 3 cloves garlic, minced
  • 1 large egg
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)

2. For the Sauce:

  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • ⅓ cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • 2 tbsp fresh basil, chopped
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix meatball ingredients in a bowl, combining gently. Shape into 18-20 meatballs.
  3. Bake for 15-18 minutes until golden brown.
  4. Prepare the sauce: In a large skillet, heat olive oil and sauté garlic for 30 seconds.
  5. Add sun-dried tomatoes and cook for 2 minutes. Pour in chicken broth and simmer for 3 minutes.
  6. Stir in heavy cream and parmesan cheese. Simmer gently.
  7. Add baked meatballs to the sauce and cook for another 5 minutes.
  8. Garnish with basil and extra parmesan. Serve immediately.

Notes

  • For extra richness, add a splash of white wine before the broth.
  • Letting the meatballs sit in the sauce for 5+ minutes enhances flavor.
  • For a dairy-free version, use coconut milk and skip the parmesan.
