  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 12 oz pasta of choice
  • Salt and pepper, to taste
  • Optional: pinch of red pepper flakes
  • Fresh parsley or basil, chopped, for garnish


Instructions

  • Season chicken with salt and pepper. Cook in olive oil over medium-high heat until golden and cooked through. Rest covered.
  • In the same skillet, melt butter and sauté garlic until fragrant. Add sun-dried tomatoes and cook for a minute.
  • Pour in chicken broth and simmer 2–3 minutes. Reduce heat and stir in heavy cream. Simmer gently 3–5 minutes until thickened.
  • Stir in parmesan cheese. Season with salt, pepper, and optional red pepper flakes.
  • Return chicken to skillet, coating it in sauce.
  • Toss cooked pasta in sauce, ensuring each strand is coated. Garnish with fresh herbs and serve immediately.
