Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz linguine pasta
  • 3 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • Zest and juice of 1 lemon
  • 1/2 cup freshly grated parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook linguine according to package instructions. Drain, reserving 1 cup pasta water.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper and cook until golden brown, about 7-10 minutes per side. Set aside.
  3. In the same skillet, melt butter and sauté garlic until fragrant, about 1 minute. Add lemon juice and zest.
  4. Add cooked pasta to the skillet with garlic butter. Toss to coat, adding pasta water if needed to thin the sauce.
  5. Slice chicken and add to pasta. Sprinkle with parmesan cheese and toss to combine.
  6. Garnish with fresh parsley and serve.
