Ingredients
Scale
- 2 boneless, skinless chicken breasts
- 8 oz linguine pasta
- 3 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 garlic cloves, minced
- Zest and juice of 1 lemon
- 1/2 cup freshly grated parmesan cheese
- Salt and pepper, to taste
- Fresh parsley, chopped (optional)
Instructions
- Cook linguine according to package instructions. Drain, reserving 1 cup pasta water.
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper and cook until golden brown, about 7-10 minutes per side. Set aside.
- In the same skillet, melt butter and sauté garlic until fragrant, about 1 minute. Add lemon juice and zest.
- Add cooked pasta to the skillet with garlic butter. Toss to coat, adding pasta water if needed to thin the sauce.
- Slice chicken and add to pasta. Sprinkle with parmesan cheese and toss to combine.
- Garnish with fresh parsley and serve.
Notes
- For extra creaminess, add a splash of heavy cream to the sauce.
- Don’t forget to season your pasta water generously with salt for the best flavor.
