Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground beef or Italian sausage
  • 1 can (28 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 4 cups chicken or vegetable broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Pinch red pepper flakes (optional)
  • 6 lasagna noodles, broken into 2-inch pieces
  • 1 cup ricotta cheese
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish


Instructions

  • Heat olive oil in a large pot over medium heat. Sauté onions until softened, about 3-4 minutes. Add garlic and cook 1 minute.
  • Add ground meat and cook until browned. Drain excess fat.
  • Stir in crushed tomatoes, tomato paste, broth, Italian seasoning, basil, oregano, and red pepper flakes. Bring to a simmer.
  • Simmer uncovered for 15 minutes to develop flavor.
  • Add broken lasagna noodles and cook until tender, about 8-10 minutes.
  • Lower heat and gently stir in ricotta and mozzarella cheeses until melted and creamy.
  • Season with salt and pepper. Sprinkle Parmesan on top.
  • Garnish with fresh herbs before serving.
