Ingredients
- Olive oil, 2 tbsp
- Onion, 1 medium, finely chopped
- Garlic, 3 cloves, minced
- Carrots, 2 medium, diced
- Celery stalks, 2, chopped
- Crushed tomatoes, 28 oz
- Tomato paste, 2 tbsp
- Chicken or vegetable broth, 4 cups
- Ground beef or Italian sausage, 1 lb (optional)
- Lasagna noodles, broken into bite-sized pieces, 6 sheets
- Ricotta cheese, 1 cup
- Shredded mozzarella, 1 cup
- Grated Parmesan, ½ cup
- Fresh basil and parsley, chopped, ¼ cup
- Italian seasoning, 1 tsp
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large pot and sauté onions, garlic, carrots, and celery until soft.
- Add meat (if using) and cook until browned. Drain excess fat if necessary.
- Stir in tomato paste for 2 minutes, then add crushed tomatoes, broth, Italian seasoning, salt, and pepper. Simmer 15 minutes.
- Add noodles and cook until tender, 8–10 minutes.
- Turn off heat, stir in ricotta, mozzarella, and fresh herbs. Serve immediately with extra Parmesan.
