Ingredients

  • 1 lb smoked kielbasa sausage, sliced
  • 2 bell peppers (any color), slice
  • 1 large yellow onion, sliced
  • 23 cloves garlic, minced
  • 1½ tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • Optional: 1½ cups baby potatoes or carrots


Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a large bowl, combine sliced kielbasa, peppers, onions, garlic, olive oil, paprika, salt, and pepper.

  3. Toss until everything is evenly coated.

  4. Spread mixture onto a large baking sheet in a single layer.

  5. Roast for 25–30 minutes, flipping halfway through, until sausage is browned and veggies are tender.

  6. Garnish with parsley or green onions and serve hot.

Notes

  • For extra flavor, try adding a splash of balsamic vinegar during the last 5 minutes of roasting.
  • Don’t overcrowd your pan—spread ingredients out to help caramelize instead of steam.
