Description

  • 4 bone-in, skin-on chicken thighs or drumsticks
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 3 tablespoons ketchup
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 teaspoons fresh grated ginger
  • 3 cloves garlic, minced
  • 2 green onions, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. In a bowl, whisk together soy sauce, brown sugar, ketchup, rice vinegar, sesame oil, ginger, and garlic to create the marinade.
  2. Place chicken in a resealable bag or shallow dish, pour marinade over the chicken, and refrigerate for 2 to 4 hours (or overnight for best results).
  3. Preheat your grill to medium-high heat.
  4. Remove chicken from the marinade (discard any used marinade or reserve some for basting after boiling it).
  5. Grill chicken for 10-12 minutes on each side or until the internal temperature reaches 165°F.
  6. Garnish with freshly chopped green onions and serve with lime wedges and side dishes of your choice
