Ingredients
Scale
- 2 chicken breasts, boneless and skinless
- 1 cup flour
- 1/4 cup cornstarch
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs
- 1/4 cup buttermilk (optional)
- 1 cup hot honey

- 2 cups rice (white, brown, or quinoa)
- Fresh vegetables (lettuce, cucumbers, carrots, tomatoes)

Instructions
- Start by preparing the hot honey sauce: Heat honey, red pepper flakes, garlic, and lemon juice in a saucepan until warm. Set aside.
- Prepare the chicken: Whisk together flour, cornstarch, paprika, cayenne, salt, and pepper in a shallow bowl. Dip chicken in beaten eggs and coat it in the flour mixture.
- Fry the chicken in hot oil until golden and crispy, about 6-8 minutes per side.
- Assemble the bowl: Layer rice at the bottom, add fresh vegetables, and top with crispy chicken.
- Drizzle hot honey sauce over the chicken and garnish with cilantro. Serve immediately.
Notes
- For extra crispy chicken, double-dip the chicken in the flour mixture.
- Make your own hot honey by combining honey with chili flakes or hot sauce.
- Vegan option: Substitute chicken with crispy tofu.
