Ingredients

  • 4 bone-in, skin-on chicken thighs or breasts
  • ¼ cup honey
  • 2 chipotle peppers in adobo sauce, chopped, plus 2 tablespoons of adobo sauce
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice of 1 lime
  • Salt and pepper, to taste
  • Optional: ¼ teaspoon cayenne pepper for extra heat

Instructions

  • In a mixing bowl, combine honey, chopped chipotle peppers, adobo sauce, olive oil, minced garlic, lime juice, salt, and pepper. Whisk together until smooth.
  • Place the chicken in a shallow dish or resealable bag, and pour the marinade over the chicken. Refrigerate for at least 10 minutes, or up to overnight.
  • Preheat your grill to medium-high heat, or preheat your oven to 400°F, or heat a skillet over medium-high heat.
  • Cook the chicken for 5-7 minutes per side on the grill, 25-30 minutes in the oven, or 6-8 minutes per side in the skillet. The chicken is done when it reaches an internal temperature of 165°F.
  • Let the chicken rest for 5 minutes before serving. Garnish with fresh cilantro and lime wedges, and serve with your favorite sides.
